Citrus is the most extensively produced tree fruit crop in the world. There are two clearly differentiated markets: the fresh fruit and the processed juice market. The taste and aroma of both are different. 

Citrus are mainly consumed within developed countries, although  the consumption per capita is increasing in developing countries. Fresh orange consumption is decreasing in the industrialized countries and increasing in the emergent developing countries such as Mexico, India, Argentina, Brazil, and China.

Citrus Fruit Oil production is confronted worldwide with increasing biotic and abiotic constraints. They are affected by nematodes, fungi, bacteria, phytoplasmas, spiroplasmas, viruses, and viroids. Some diseases just cause a reduction in production and quality, while others have the potential to destroy a citrus oil industry. These essential oils are vital for perfuming a citrus flavor for any desired application.

Application Suitability

Citrus is grown in a wide diversity of climatic and soil conditions and consequently affected by several abiotic stresses. The increasing scarcity of water and the degradation of its quality (mainly salinity) are part of the major abiotic constraints for many countries, but in others flooding is an important problem. Therefore, the suitability depends on the citrus oil used in blending, also by understanding a geological problems in the ambience of a finished product.

Our testing notes will never take the place of your own personal testing.  Always test flavors in finished (product) applications.

In order to bridge the gap on sensory assessment of isolated single chemicals and chemicals in a complicated oil mixture, omission tests and aroma recognition tests have been used
