And that pleasure is too often lacking in vegetables that we eat, to add that pleasure flavor boosting component is applied.  We need macronutrients in large quantities. Many volatiles have been identified in vegetables,  work is still on elucidating the biosynthetic pathways of their formation and ascertaining the relative contribution of individual components to the characteristic or desirable flavor. Mainly the production of flavor constituents from unsaturated fatty acids and glucosinolates are vital in perfumery.

Application Suitability

In most vegetables the intact tissues contain nonvolatile precursors which are split by enzymatic action when the tissue is disrupted by crushing, cutting or slicing. Typical veggie volatiles include esters, alcohols, acids, lactones, carbonyls and terpenes while core vegetable volatiles are nitrogen and sulfur compounds and carbonyls.

Please Note: Due to the fact that our flavors are very concentrated, we suggest that you test our flavors in finished products before you make any conclusions about our compounds. Since our flavors are so strong, we suggest only using 0.5 to max 2% in any finished product. Our testing notes will never take the place of your own personal testing. Always test flavors in finished (product) applications.

Low consumption  vegetables among children is considered to be a leading contributor to childhood obesity, making it prudent to develop healthier foods that are accessible, affordable and satisfying to children. Sensory testing for eight attributes (overall liking, overall appearance, appearance of texture, appearance of color, taste, mouth feel, amount of veggie flavor, amount of sweetness) are rated. Adults and kids demonstrated significantly different preferences for the tropical and vegetative applesauce flavors but no difference with the strawberry banana-flavored applesauce.
