Application Suitability
In most vegetables the intact tissues contain nonvolatile precursors which are split by enzymatic action when the tissue is disrupted by crushing, cutting or slicing. Typical veggie volatiles include esters, alcohols, acids, lactones, carbonyls and terpenes while core vegetable volatiles are nitrogen and sulfur compounds and carbonyls.
